Gerard started his career in Ireland with stints in Zurich-London-Dubai-Beijing-Shanghai-Manila & Sydney, Australia. During his International career he has been fortunate to have cooked for many heads of state including the Queen of England.

Having had the opportunity to have worked with Californian Japanese chefs for a decade Gerard brings a wealth of experience to Bellagio with the opening of Wasabi.

Gerard's previous guests have included Sir Richard Branson, Natalie Embrulia,(torn) Silver chair Daniel Johns, Rock legend Jimmy Barnes, Mark Webber formula 1 Driver and DJ Bruno from Cafe Del Mar.

On top of that, He also had served in many Luxury Hotels in France, Monaco, Egypt, India, Singapore, Dubai, Thailand & Philippine.
