Gerard started his career in Ireland with stints in Zurich-London-Dubai-Beijing-Shanghai-Manila & Sydney, Australia. During his International career he has been fortunate to have cooked for many heads of state including the Queen of England.

Having had the opportunity to have worked with Californian Japanese chefs for a decade Gerard brings a wealth of experience to Bellagio with the opening of Wasabi.

Gerard's previous guests have included Sir Richard Branson, Natalie Embrulia,(torn) Silver chair Daniel Johns, Rock legend Jimmy Barnes, Mark Webber formula 1 Driver and DJ Bruno from Cafe Del Mar.

Guillaume Bonnety is One of the Top Pastry Chef in the world. Well known for his Creativity, Uniqueness yet inspiring style, Chef Guillaume received many prestigious awards in various International Competitions and Food Exhibitions such as; 1st Prize Winner with Distinction of Chocolate Showpiece, 1st Prize Winner of Plated Dessert, 1st Prize Winner of Sugar Showpiece, 1st Prize Winner of Wedding Cake, 1st Prize Winner of Petit Fours, Trophy of The best Overall Winner, 1st Prize Winner Apprentice Baker, 1st Prize Winner Apprentice Pastry, and so many more. On top of that, He also had served in many Luxury Hotels in France, Monaco, Egypt, India, Singapore, Dubai, Thailand & Philippine.

Terry hails from Singapore where he worked with the Marriot hotel. His great cocktail making skills will delight your taste buds having created many of the signature drinks on our Wasabi list.

David brings a touch of Hard Rock Cafe Bangkok to Bellagio's Med Lounge. He works his magic from hard hitting cocktails to his wonderful bag of bar tricks, be prepared to be mesmerized.
